Happy Wednesday! Fall weather always puts me in the mood for baking! Anyone else? If so, you’ve come to the right place because I have a delicious Apple Crumb Coffee Cake to share with you!
Bring the Baked Goods!
A few months ago I moved into a new position at work and now I get to work with a bunch of older guys, mostly in their 50s and 60s and they are a blast! The one younger guy in the bunch told me (jokingly) that if I’d bring them some baked goods every week we’d get along fine.
Well, little did he know how much I love to bake! So every Monday since I started, they’ve had some kind of treat to enjoy and they let me know each week how much they appreciate it!
Last week I brought in this apple crumb coffee cake and they told me I outdid myself so I thought it would be worth sharing with you!
I originally saw this recipe on Mommy’s Kitchen blog but I made a few tweaks to the ingredients and the baking process so I’ll share those here!
Apple Crumb Coffee Cake
For the cake, mix all of your dry ingredients thoroughly in a medium bowl. Combine butter, sugar, egg, and vanilla.
The original recipe called for sour cream, but I substituted plain Greek yogurt instead. Add that in to the wet ingredients. Then slowly add in your flour mixture and beat until thoroughly combined.
For the filling, combine all of your ingredients including the apples. In the original recipe, they kept the apples separate and only used them in the middle of the cake. I combined them with the filling that gets placed in the center and on the top and I liked having the apples spread throughout.
The original recipe called for a springform pan and if you have one, that’s great! I didn’t so I used 9 inch round pan and it worked great, too.
Spread half of the cake batter in the bottom of the pan. Add half of the apple cinnamon filling. Spread the remaining cake batter over the filling and top with the remaining filling.
Now you’re ready for the glaze! Instead of the apple cider glaze, I did a powdered sugar glaze. I’m sure the apple cider glaze is delicious, but I didn’t have any cider on hand and the powdered sugar glaze was really good on the cake!
I made some homemade whipped cream using heavy whipping cream and powdered sugar to serve with the cake. Yum!

Apple Crumb Coffee Cake
For the Cake:
- 4 tbsp butter softened
- 1/2 cup cane sugar
- 1 egg
- 1 tsp vanilla
- 1/2 cup Greek yogurt plain
- 1 cup flour
- 1/4 tsp baking soda
- 1/4 tsp sea salt
- 1/2 tsp baking powder
For the Filling:
- 1 1/2 cups flour
- 1/2 cup brown sugar
- 1/4 cup cane sugar
- 1/2 tsp sea salt
- 1 tsp cinnamon
- 1/2 cup butter melted
- 1/2 tsp vanilla
- 2 apples peeled, chopped
For the Glaze:
- 1/2 cup powdered sugar
- 1 tbsp milk
Preheat oven to 350. In a medium-sized bowl, combine dry cake ingredients. Set aside.
In a standard mixing bowl, combine butter, sugar, egg, vanilla, and yogurt.
Gradually add dry mix to the cake batter and mix thoroughly. Set aside.
Core, peel, and chop apples.
Combine all filling ingredients in a medium bowl and mix until crumbly. Add apples.
In a greased 9-inch round pan, spread half of cake batter in the bottom. Top with half of filling. Spread remaining batter over filling and then top with the other half of the filling.
Bake in oven for 35-40 minutes or until toothpick in the center comes out clean.
Beat powdered sugar with milk to make a glaze. Pour evenly over cake while still warm.
Serve warm with whipped cream or ice cream! Enjoy!
