Grab your favorite tortilla chips and get ready for the best guacamole you’ve ever had!
Several years ago when my husband was still on a church staff we went to a conference at Glorieta Baptist Conference Center. I had just given birth to our daughter seven weeks prior and we loaded her and our (almost) three-year-old son into the church van to make the hours-long trek to New Mexico. Thankfully our sweet friends, Wayne and Colleen (who are like another set of parents to us and grandparents to our kids!) came with us. It seems a little crazy now that we made the trip with our two young’un’s, and I honestly don’t remember that much about it.
Except for the guacamole.

An Unexpected Surprise
I didn’t grow up eating a lot of Mexican food. And we never had guacamole. I didn’t even want to try it because it’s green and mushy and just didn’t look that appetizing to me.
But on this trip, our friends took us to this little Mexican restaurant that they had been to before. They kept talking about the amazing guacamole that they made fresh right in front of you.
So we ordered it.
Our waiter came out with the ingredients – a few avocados, some tomatoes, a little cilantro, and onion, you get the picture. He mixed it together and placed the finished dip on our table.
And I tried some.
Who knew green mush could taste so good?! All those flavors coming together on the end of my tortilla chip made for the most delicious surprise when I popped it in my mouth! I was hooked!
Well, Colleen had watched them make it enough that she decided to try her hand at it when we got back home. Let me tell you – she nailed it! After that, we were always asking her to make her guacamole. And she was kind enough to share with us how she made it. And when I asked her if I could share it with you she said, “Of course!”
We moved away almost five years ago now, but we still try to see each other as often as we can and Colleen’s guacamole is a staple at every Mexican meal or special occasion. It’s perfect for when you just need some good appetizers!
Best Ever Guacamole
It’s super simple to make, too!
Start by cutting your avocadoes in half and removing the pit. Scoop the insides into a bowl. Add the salt and garlic. Then squeeze your lime juice in and mash it all together. I have this handy tool that I use and it works perfectly for this! Sometimes I leave some avocado chunks in mine because I like it a little chunky, but that’s completely up to you!
Dice 1 to 2 Roma tomatoes and add those to the mix.
Use an electric chopper (I have this one by KitchenAid and LOVE it!) to chop the onion and cilantro and scoop it into the dip. Mix it all together until thoroughly combined. And ta-da! You’ve just made the BEST ever guacamole! Make sure you do the taste test to make sure there is enough salt for your liking. Sometimes I find I need to add a little more cilantro, as well. I looove cilantro!

Best Ever Guacamole
- 4 large avocadoes ripe
- 2 Roma tomatoes diced
- 1 lime juiced
- 1 tsp sea salt
- 1 bunch cilantro
- 1/2 tsp garlic minced
- 1/4 white onion
Cut avocadoes in half and remove pits. Scoop insides into a bowl.
Add salt, garlic, and juice from lime.
Dice tomatoes and add them to the mix. Cut onion into fours and add one portion to an electric chopper. Pull off a bunch of cilantro and add it to chopper, as well. Add cilantro and onion to dip and mix thoroughly.
Tip: Avocadoes can start turning brown quickly. Reserve a pit and put it in the dip to keep it fresh longer.
