These Beef Enchiladas are so easy to make and taste AH-MAZING!
Any Mexican food lovers out there? I have a yummy recipe for you! Cheesy Beef Enchiladas!
It’s starting to feel like summer! My hubby and kids are out of school, which means Eric becomes Mr. Mom and takes care of the children, the laundry, the dishes, and the meals. I love summer! He made our favorite enchiladas earlier this week and I thought you might want me to share the love!
The recipe came from his mom and it is hard to beat and SOOO easy!
Before sharing, I have to admit, Mexican food was an acquired taste for me. I really didn’t care for it that much until we moved out to western Kansas. There are a lot of Hispanics in western Kansas and a lot of authentic Mexican restaurants. Since our friends all loved it, we ended up eating it a lot. Before too long, I was hooked! Give me all the salsa and guac!
Cheesy Beef Enchiladas
So on to the goods!
There are only four ingredients needed to make these: tortillas, enchilada sauce, ground beef, and shredded cheese. That’s it! And you can brown the ground beef ahead of time to make prep time even faster on the day of!
After your beef is browned and drained, add your favorite enchilada sauce. We’ve tried several different kinds. I’ve even tried making my own. But for me, Old El Paso is hands down the best! We buy their mild sauce and it’s delicious! I buy two 10 oz. cans and use one for the meat and one for the top.
Stir the meat and sauce until thoroughly combined. Spoon about 1/3 cup onto a tortilla and sprinkle with cheese. Roll up and place in a greased baking dish. Repeat until meat is gone (should make about 8 enchiladas).
Pour the second can of sauce evenly over the top of the enchiladas and top with the remaining shredded cheese. I usually buy the Mexican blend but you can use cheddar or whatever you prefer.
Pop the dish in the preheated oven and bake for 30 minutes. Done!
We like to serve them with sliced avocadoes and cilantro sprinkled on top! Add some chips and salsa and you’re ready to go! It also goes great with the guacamole recipe I shared a while back!
TIP: For a healthier version, we use grass-fed beef, organic cheese, and either homemade tortillas or uncooked store-bought that only have five or so ingredients.
Cheesy Beef Enchiladas
- 1 lb. ground beef
- 2 cans enchilada sauce 10 oz. cans
- 2 cups shredded cheese
- 8 tortillas 10 inch
1. Preheat oven to 350 degrees.
2. In a skillet on medium-high heat, brown ground beef. Drain.
3. Add one can of enchilada sauce (a little over a cup) to the beef and combine thoroughly.
4. Spoon 1/3 cup of mixture onto tortilla and sprinkle with cheese. Roll up and place in greased 9x13 baking dish.
5. Continue until all beef is gone (makes about 8 enchiladas).
6. Pour second can of sauce over enchiladas and top with remaining cheese.
7. Bake uncovered for 30 minutes.
8. OPTIONAL: Garnish with avocado slices or sour cream and cilantro. Serve with salsa and tortilla chips. Enjoy!
