Hey friends! It’s Wednesday, and I have another recipe to share with you!
With fall just around the corner, this Mashed Potato Pie is sure to warm your belly! It’s one of our favorite dishes when the weather starts to turn chilly, plus it’s really easy to throw together.
This meal pairs nicely with homemade rolls or corn muffins. I love Arrowhead Mill’s Corn Bread and Muffin mix. The muffins are delicious! We also use it as a breading when we fry okra from our garden! It was hard to find for a while so I purchased it on Amazon, but recently I found it at my local health food store so hopefully, they’ll keep it in stock!
Ok so on to the recipe!
You will need:
1 lb. ground beef
1 can or a cup of green beans (I’ve used fresh, frozen, and canned-they all work great!)
1 can cream of chicken soup
3 large baking potatoes (peeled, diced, cooked and mashed-I add milk, butter, salt and pepper to mine)
1 1/2 cups of cheddar cheese
Preheat oven to 350. In a large skillet, brown ground beef, drain and return to skillet. Add in cream of chicken soup and green beans and mix thoroughly. Spoon into 8×8 greased glass baking dish. Spread mashed potatoes over meat mixture and top with cheese. Bake for 30 minutes or until heated through and cheese is bubbly.
