We love this super easy homemade lasagna and you will, too!
I love Italian food and lasagna is probably my favorite. Plus right now I can still make a whole pan and get two meals out of it. I know that won’t be the case much longer with two growing boys in the house! My daughter, as my grandma used to say, “Doesn’t eat enough to keep a bird alive!” Haha!
So today I’m going to share my recipe with you. I used to use a Kraft recipe, but it was a little more complicated and used ricotta cheese, which is good, but I like cottage cheese better. Just a personal preference. So I came up with my own simple recipe.

9 lasagna noodles (I’ve used whole grain and regular in this recipe)
Jar of spaghetti sauce
16 oz. container of cottage cheese (I like Daisy because they leave the junk out!)
1 lb. of ground beef (I typically use grass-fed)
2 cups shredded mozzarella or Colby jack cheese
Preheat the oven to 350 and grease a 9×13 glass dish. Cook lasagna noodles according to the package. Brown ground beef in skillet, drain. Return to skillet and pour in spaghetti sauce. Mix thoroughly. Begin to layer in glass dish starting with three noodles, then a third of the cottage cheese, a third of the beef and sauce mix and finally, 1/2 cup of cheese. Continue layering in this way – you should have 1 cup of cheese left to sprinkle on top. Cover with foil and bake for 25-30 minutes then remove the foil and bake for an additional 10 minutes or until cheese is bubbly.
Serve with salad and garlic bread!
