Do you struggle to find meals that are quick and easy? Ones that your kids will actually eat instead of turning their noses up at? Something that makes plenty for a bigger family without costing a fortune?
Then bookmark this post because you’ll LOVE this tater tot casserole!
We were at my in-laws for the Super Bowl and my mother-in-law had tater tots. It had been a while since we’d had tater tots and I forgot how much my kids LOVE them. They devoured them in no time!
She mentioned she used to make a tater tot casserole with ground beef and I remembered making something similar years ago when they were younger but it had been a long time.
I decided it was time to make it again!
Picky Eaters
Do you have picky eaters? Two of my three kids are picky eaters. My daughter is THE WORST. She would live on macaroni and cheese if I’d let her. She would seriously sit at the table all night if it meant not having to eat something she doesn’t like.
It got so bad I finally started putting her meal in the fridge and serving it to her for breakfast the next morning. Let me tell you how excited she was about that!
But it worked! She knows she has to eat it at some point so even though she still complains about it, she eats it!
Mom! Make This Every Week!
So I decided to give the tater tot casserole a try. The best part is that it’s super easy to throw together and it only calls for FOUR ingredients!

You start by browning one pound of ground beef. Add cream of mushroom soup (I like Pacific’s organic) and spoon the mixture over frozen tater tots in a greased 9×13 dish. Add 1-2 cups of shredded cheese (we like LOTS of cheese) and put bake it in the oven at 375 for 30 minutes.

That’s it!
And guess what? The kids LOVED it. “Mom! You have to make this every week!” Those were the words that came out of my daughter’s mouth after her first few bites.
Serve it with some green beans or your favorite veggie and you have an easy, well-rounded meal!

This meal is definitely getting added to the rotation alongside spaghetti and this easy enchilada recipe I shared a while back!

Your comments about your daughter sounds just like one of my boys. He seriously will willingly eat about 2 things, one of which is cheese! 😩. Another one of my boys isn’t a great deal better. I’m gonna have to give this a try!
