Banana bread, pumpkin bread, zucchini bread…I love bread! There’s nothing better than the smell of homemade bread in the oven.
My kids come running when they hear me pull it out, fresh and hot! They can’t wait to cut into it and add a slab of creamy butter!
Today I want to share with you the most amazing banana bread you’ll ever taste!
This recipe has been in my family for years. I get TONS of compliments when I bring it to share with friends or co-workers.
It’s super easy to throw together, which is always a plus. It’s perfect for breakfast, an after school snack, or to share with a friend!

Ripe Bananas
The key to good, moist banana bread is to use ripe bananas. I like to use them after they’re 3-4 days past good to eat.
The more ripe the bananas are, the richer the batter and tastier the bread!
Making the Bread
Soften your butter and add it to a mixing bowl. I like to use my KitchenAid stand mixer! Cream in the sugar. Add the egg and vanilla and combine until smooth.
You can combine your dry ingredients into a bowl and then add it to the mixture or add them in one at a time. I usually just add them in one at a time starting with the salt, then the baking soda, and finally the flour.
Mix until all ingredients are thoroughly combined.
Mash your two ripe bananas and add them to your batter. Mix until batter is a creamy texture.
Pour batter into a large greased loaf pan. Bake in the oven at 350 for 40 minutes or until a toothpick inserted in the center comes out clean!
Enjoy hot with some butter! Store tightly covered for 2-3 days.
This bread also freezes great, so if you want to double or triple the recipe and save some for later, go for it!
Variations: Add 1/2 cup of walnuts to the batter for your nut lovers!

Ingredients
- 2 ripe bananas mashed
- 1/4 cup butter softened
- 1 egg
- 1/2 cup sugar
- 1/2 tsp vanilla
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1 cup unbleached flour
Instructions
Preheat oven to 350. Grease a large loaf pan.
Cream together butter and sugar.
Add egg and vanilla and mix until thoroughly combined.
Add salt and baking soda, then slowly mix in flour.
Add the mashed bananas and thoroughly mix until batter is creamy.
Pour batter into greased pan and bake for 40 minutes or until toothpick in the center comes out clean. Enjoy!
