Hey there! It’s Friday and I am ready for the weekend! We started a small makeover on our front porch and I’m looking forward to sharing it with you next week! But today let’s talk fajitas!
I’m all about easy meals and this one is super simple. The prep time takes about 5-10 minutes and dinner is done in 30. That’s my kind of meal!
Oven Baked Fajitas
Start by preheating your oven to 400 degrees. For this recipe, I usually purchase the frozen mix of precut peppers and onions to save time. I also buy chicken tenderloins since they’re already in strips. I still cut them in half, but it doesn’t take as long as it would to cut up whole breasts.
I use a homemade fajita seasoning that is delicious and doesn’t have any junk that the store bought packets sometimes have. You can make a large batch ahead of time and store it in an airtight container so it’s ready when you need it.
On a large baking sheet, you’ll place the chicken and the vegetables. Drizzle a little olive oil over the top and then sprinkle on the seasoning. Using tongs, toss the chicken and veggies until completely coated with the oil and seasoning mixture.
Pop the fajitas in the oven and bake for 30 minutes or until chicken is cooked through.
Don’t forget the toppings! I love some shredded cheese and some fresh cilantro. Avocado is great, too, with some sour cream. And sometimes I squeeze lime juice over the fajitas after I take it out of the oven for a little more flavor.
Obviously, store-bought tortillas make this meal super easy and fast and we do that a lot. But this last time I made my own and they were SO good! I used the recipe from The Prairie Homestead. They only call for four ingredients – flour, salt, oil, and hot water. That’s it! And they taste amazing!
Be sure to check the recipe out on her site. One tip I would give is to make sure you roll the dough out really thin. Mine was a little thicker than the typical tortilla because I didn’t roll the dough out enough.

- 1 lb chicken tenderloins
- 1 bag frozen peppers and onion
- 1 packet fajita seasoning or use homemade
- 1-2 tbsp olive oil
Preheat oven to 400.
Cut tenderloins in half.
On a baking sheet, place chicken and peppers.
Drizzle olive oil over chicken and peppers and sprinkle seasoning over mixture.
Using tongs, toss chicken and peppers until thoroughly coated.
Bake in oven for 30 minutes or until chicken is cooked through.
Shredded cheese, sour cream, cilantro, and avocado.
