Perfect for Holidays and Potlucks
This week we had an all-staff potluck at work and I signed up to bring dessert. A friend of mine asked if I would bring pumpkin bars. I had never made them before but an acquaintance had recently shared her family recipe with me and kind to allow me to share it here.
I love pumpkin – pumpkin bread, pumpkin pie, cinnamon pumpkin candles…I could go on and on! I was so excited to try out these bars!
Pumpkin Bars
These bars are so great because they make a lot and are so easy to throw together! My daughter wanted to help so we gathered all the ingredients and got to work! The original recipe called for one cup of oil, but I didn’t have enough oil on hand so I substituted it with one cup of butter and they still turned out fabulous!
You’ll need a sheet cake or jelly roll pan for this cake. Once you’ve mixed the cake ingredients thoroughly, pour the batter in your greased pan.
While it was baking, we whipped up the cream cheese frosting. The recipe calls for 3-4 cups of powdered sugar. I used three cups for mine and was pleased with how it turned out.
Add the frosting after the cake is completely cool. I put mine in the fridge for a while so the top wouldn’t peel off when I went to frost it!
All that’s left is to cut the cake into bars and serve! My kiddos LOVED these pumpkin bars! Since I had to take this batch to work they only had a small slice so I promised to make more this weekend! I also received TONS of compliments from my co-workers and needless to say, there were no leftovers!

Pumpkin Bars
Ingredients
For the cake:
- 4 eggs
- 1 cup butter melted
- 1 12 oz. canned pumpkin
- 1 tsp vanilla
- 2 cups sugar
- 2 cups flour
- 2 tsp cinnamon
- 2 tsp baking soda
- 1 tsp salt
For the frosting:
- 4 oz. cream cheese softened
- 4 tbsp butter softened
- 1 tsp vanilla
- 3-4 cups powdered sugar
Instructions
For the cake:
Preheat oven to 350 degrees.
In a large bowl, beat eggs.
Add in butter, pumpkin, vanilla and sugar.
In a medium bowl, combine flour, soda, salt and cinnamon. Add to wet ingredients and mix well.
Bake in greased 12x16x1 pan for 20 minutes. Remove and let cool completely.
For the frosting:
Beat cream cheese and butter together until light and fluffy.
Add vanilla.
Gradually add in 3-4 cups of powdered sugar (according to taste preference), mixing thoroughly.
Frost cake and cut into bars. Enjoy!
