Not too long ago I shared this healthy recipe for oven-baked chicken fajitas that included homemade tortillas. But sometimes you just need a fast meal. So here’s another twist on chicken fajitas that will have you chowing down in less than 30 minutes!
Easy Chicken Fajitas
For the chicken, I purchase John Soules fully cooked chicken fajita in the frozen food section.
I also like Target’s brand of organic frozen mixed peppers and onions. Sometimes it’s unavailable so I just buy a red and green pepper and a white onion and slice them up real quick.
Preheat your oven to 425. Using a nonstick cookie sheet, dump the chicken and pepper mix on the pan and drizzle with olive oil. Toss with tongs to coat.
Pop in the oven for 20-25 minutes. That’s it! While the fajitas are baking you can gather your tortillas, shredded cheese, salsa, sour cream and any other toppings you like!
It doesn’t get much easier than that! Serve with tortilla chips and if you like guacamole, check out this delicious recipe I shared a while back!
Quick and Easy Chicken Fajitas
- 1 16 oz. pkg Fully Cooked Chicken Fajitas John Soules brand
- 1 pkg frozen onion/pepper mix or use freshly sliced
- 2 tbsp olive oil
- 1 pkg Mission Street Taco Flour Tortillas
- 1-2 cups shredded cheddar cheese topping
- salsa topping
- sour cream topping
- 1 avocado topping
Preheat oven to 425.
Pour bag of chicken and peppers on non-stick pan. Drizzle with olive oil and toss to coat.
Bake in oven for 20-25 minutes.
Serve with street taco tortillas. Top with shredded cheese, sour cream, and salsa or Pico de Gallo.
Serve with tortilla chips and salsa or guacamole. Enjoy!
