Any cookie lovers out there? We love cookies and make a batch pretty much every week. Sometimes we just make the dough without the eggs, spoon it up in bowls and eat it like ice cream. So good! Our favorite is chocolate chip so when I came across this dip we decided we had to try it! But it was crisis mode when we realized we had nothing to dip in it! Enter these 3-ingredient shortbread cookies!

Every time I eat a shortbread cookie it takes me back to when I was little. It seemed like my grandma always had Royal Dansk Butter Cookies in that pretty blue tin. They were different shapes and had coarse sugar sprinkled on top. I loved them!
This recipe is so simple and only calls for three ingredients – flour, brown sugar, and butter. That’s it! They are delicious and just melt in your mouth!
It was really easy to whip up a batch to go with our yummy dip!
Simple Shortbread Cookies
Start with two sticks (one cup) of cold butter. Cut the butter into pieces and combine with 1/2 cup of brown sugar in a bowl or stand mixer. Beat on high until light and fluffy.
Gradually beat in 2 1/2 cups of the flour until combined. Sprinkle half a cup of flour on a clean surface and transfer the dough. You will knead the dough for about five minutes, adding in the remaining flour as needed. You may not need to use it all. Your dough should feel soft and pliable.
Wrap your dough and chill for 30 minutes or until firm.
When your dough is firm, roll it out on a floured surface to about 1/2 inch thickness. Use cookie cutters (or these cute biscuit cutters!) to cut the cookies out.
Place them on a greased baking sheet and bake for 10-12 minutes at 325 degrees.

Chocolate Chip Cream Cheese Dip
This is dip is so good you could just eat it with a spoon! And it’s super simple to make! Start with a package of softened cream cheese and a softened stick of butter combined thoroughly in a medium bowl.
Beat in 3/4 cup of powdered sugar. Add a teaspoon of vanilla and two tablespoons of brown sugar.
Toss in a cup of miniature chocolate chips and you are done!
I brought this dip to work and it was gone in no time! It would be a great appetizer for any party!
You can also serve it with strawberries, graham crackers, or vanilla wafers. So many options!
- 1 cup butter
- 1/2 cup brown sugar
- 3 1/2 cups flour
Preheat oven to 325. Cut butter into pieces and place in large mixing bowl. Beat butter and brown sugar until fluffy. Gradually add 2 1/2 cups of flour.
Sprinkle 1/2 cup of flour on a clean surface. Transfer dough and knead for five minutes, adding in remaining flour until dough is soft and pliable.
Wrap dough and chill for 30 minutes or until firm.
Roll dough out on floured surface to 1/2 inch thickness. Use cookie cutters to cut out cookies and place them on greased cookie sheet, 2 inches apart.
Bake for 10-12 minutes or until light brown on the edges.
Chocolate Chip Cream Cheese Dip
- 8 oz cream cheese softened
- 1 stick butter softened
- 3/4 cup powdered sugar
- 1 tsp vanilla
- 2 tbsp brown sugar
- 1 cup miniature chocolate chips
Beat cream cheese and butter until thoroughly mixed. Slowly add in powdered sugar. Beat in vanilla and brown sugar. Gently stir in chocolate chips. Chill for an hour before serving.
