Happy Friday my friends! I wanted to pop in today and share this DELICIOUS recipe a friend of mine introduced to me recently! It combines snickerdoodles with apple pie and a sweet cream cheese filling and it’s SO easy to make!
Snickerdoodle Apple Cream Cheese Pie
This melt-in-your-mouth goodness is called Snickerdoodle Apple Cream Cheese Pie and my hubby said aside from anything chocolate (lol!) it’s his new favorite dessert!
It starts with one of those snickerdoodle cookie mixes you can buy at the store. I’d like to try a from-scratch version one of these days, but using the premade mix makes this dessert go together super quick!
You start by combining the mix with butter and pressing a portion of it into a greased 9-inch pie dish. Then you bake it in the oven on 350 for about ten minutes.
In the meantime, put together your filling. Soften the cream cheese and add sugar, flour, vanilla, and an egg. Mix together thoroughly and set aside.
Dump your apple pie filling onto a plate and chop the apples into small bite-sized pieces. Add the cinnamon and stir.
Add an additional tablespoon of butter to the remaining snickerdoodle crumbs and toss to combine.
Pour the cream cheese filling into the pie crust and then add the apple pie mixture. Top it with the leftover crumbs and you’re ready to bake!
Serve it Up Hot or Cold
The snickerdoodle apple pie recipe calls for you to chill the pie for three hours before serving. I did this the first time I made it and it was great! But the second time I made it I left it out because my hubby mentioned he thought it would be good served warm with vanilla ice cream.
He was right! I made it for my brother and his wife and we all enjoyed it this way, as well. The filling is more firm when it’s been refrigerated and soft when you serve it warm. So I would say you can’t go wrong serving it straight from the oven or letting it cool and serving it later. Either way, it’s amazing!
Snickerdoodle Cream Cheese Apple Pie
Ingredients
For the Crust and Crumbly Top:
- 1 pouch snickerdoodle cookie mix
- 1 stick butter melted
- 1 tbsp butter melted
Cream Cheese Filling:
- 1 8 oz. pkg cream cheese softened
- 1/4 cup sugar
- 1 tbsp flour
- 1 tsp vanilla
- 1 egg
- 1 can apple pie filling chopped
- 1/2 tsp cinnamon
Instructions
Preheat oven to 350 degrees and grease a 9-inch pie pan.
Empty cookie mix into a large bowl and combine with melted stick of butter. Blend until the mixture forms crumbs. Press two cups into the pie pan to form the crust and bake in the oven for 10 minutes.
Add the remaining tablespoon of butter to the cookie mix and combine. Set aside.
Beat softened cream cheese in a medium bowl until smooth. Add sugar and flour and mix thoroughly, then add vanilla and egg and beat until creamy. Pour over crust.
Cut apples into bite-sized pieces and mix in cinnamon. Evenly pour over filling.
Top filling with the remaining cookie crumbles. Bake for approximately 35 minutes or until the top is golden brown.
For a firmer filling, refrigerate for three hours before serving. Or serve warm with vanilla ice cream!
