Preheat oven to 325. Cut butter into pieces and place in large mixing bowl. Beat butter and brown sugar until fluffy. Gradually add 2 1/2 cups of flour.
Sprinkle 1/2 cup of flour on a clean surface. Transfer dough and knead for five minutes, adding in remaining flour until dough is soft and pliable.
Wrap dough and chill for 30 minutes or until firm.
Roll dough out on floured surface to 1/2 inch thickness. Use cookie cutters to cut out cookies and place them on greased cookie sheet, 2 inches apart.
Bake for 10-12 minutes or until light brown on the edges.
