Strawberry Iced Shortcake

  • 1 stick butter softened
  • 1 1/4 cup cane sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp almond extract
  • 2 tsp baking powder
  • 1/2 cup milk

Frosting: 1 cup fresh strawberries, 8 oz. cream cheese, 2 cups powdered sugar



  1. Mix flour and baking powder in a medium bowl. Set aside.

  2. Cream softened butter and sugar in a large bowl. 

  3. Add eggs, one at a time until combined.

  4. Beat in half of the flour mixture, followed by milk and almond extract. 

  5. Beat in the rest of the mixture until thoroughly combined. Pour into round 8 or 9 inches greased pan. 

  6. Bake at 350 for 35-40 minutes or until a toothpick inserted in the center comes out clean.

Strawberry Frosting

  1. Cut tops off strawberries and puree in a food processor.

  2. Beat cream cheese in a medium bowl until softened. Add strawberries.

  3. Gradually beat in powdered sugar until thoroughly combined. 

  4. Drizzle over the top of cooled shortcake. Garnish with whole strawberries. Enjoy!
