Oven-Baked Fajitas

  • 1 lb chicken tenderloins
  • 1 bag frozen peppers and onion
  • 1 packet fajita seasoning or use homemade
  • 1-2 tbsp olive oil


  1. Preheat oven to 400.

  2. Cut tenderloins in half.

  3. On a baking sheet, place chicken and peppers.

  4. Drizzle olive oil over chicken and peppers and sprinkle seasoning over mixture. 

  5. Using tongs, toss chicken and peppers until thoroughly coated.

  6. Bake in oven for 30 minutes or until chicken is cooked through. 

  7. Serving suggestions:

     Shredded cheese, sour cream, cilantro, and avocado.
